Time Picker adds a date and time selector to checkout, for delivery, pickup or both. You decide which days and hours are open, how far apart the slots are and how many orders each one can take.
The chosen time goes along with the order, into the emails and the admin. There is a free version on WordPress.org if you want to try it first.
